What You’ll Need

  • 3 tablespoons of unsalted butter
  • 1 medium onion, chopped
  • 2 cups of fresh spinach, washed and dried
  • 2 tablespoons of fresh parsley, chopped
  • 2 cloves of garlic, minced
  • 1 cup of dried porcini mushrooms, rehydrated and chopped
  • 1 pre-baked quiche crust
  • 4 large eggs
  • 1 1/2 cups of heavy cream
  • 1/2 cup of whole milk
  • Pinch of nutmeg
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of white pepper
  • 1 1/2 cups of Gruyère cheese, shredded
ALLERGENS: Milk, Eggs, Wheat

Method

Step One

Start by preheating your oven to 375°F (190°C). Meanwhile, in a large skillet over medium heat, melt the butter. Add the chopped onion to the skillet and sauté until it becomes soft and translucent. This should roughly take about 6 to 8 minutes.

Step Two

Add the fresh spinach, chopped parsley, minced garlic, and rehydrated porcini mushrooms into the skillet. Continue to sauté these for about 3 to 4 minutes, or until the spinach has wilted and the garlic is aromatic.

Step Three

Take your pre-baked quiche crust and distribute the sautéed vegetable mixture evenly on the base.

Step Four

In a separate bowl, whisk together the large eggs, heavy cream, and whole milk. Season this with a pinch of nutmeg, salt, and white pepper, then pour it over the sautéed vegetable layer in the quiche crust.

Step Five

Sprinkle the shredded Gruyère cheese evenly over the top of the quiche. Put it in the preheated oven and bake for about 35 to 40 minutes, or until the quiche is set and the cheese has melted and started to brown a little.

Step Six
