For as long as I can remember, I’ve had a penchant for crafting flavors that echo the essence of the wilderness. Such an inclination is particularly distinct in my dish, Sautéed Greens with Koseret. This scrumptious recipe draws upon the robust profiles of some of Mother Nature’s most nutritious offerings, proving that eating healthily need not equate to sacrificing flavor.

Sauteed Greens with Koseret

A Dish that Echoes the Mountains

Indeed, while the Sautéed Greens with Koseret may not include my preferred mountain game or trout, its hearty and robust flavor profile is not dissimilar to them. The earthy taste of the collard greens, the tanginess of the red onions, and the unique warmth of koseret, culminate in a chorus of flavors that resonate with my adventurous spirit. As someone hailing from Colorado’s Rocky Mountains, this humble dish effectively awakens my nostagia for the fragrance of the wild.

Unlocking Nutrition & Flavor

But there’s also an added bonus—it’s brimming with health benefits. The collard greens are packed with vitamins K and A, with research indicating that the former could help prevent heart disease, and the latter contributing to strong and healthy eyesight. The olive oil introduces a heart-healthy fat to the mix, laden with antioxidants. Not that it needs much help, but the cayenne pepper is great for digestion too. So this dish isn’t only a delight to the taste buds, but is also a boon to your health. Here is where you can read more about the health benefits of fats such as olive oil.

If you’ve ever tried Ethiopian Gomen, you’d find this recipe familiar, as Koseret, a fragrant herb deeply rooted in Ethiopian cooking, is similarly used to transform mundane greens into a sublime creation. Additionally, Sautéed Greens with Koseret makes an excellent leafy counterpart to rich, dense dishes like my game meat stews or grilled trout. So, uncork a bottle of robust red wine, lay the table and prepare for a feast that celebrates the majesty of the mountains, the allure of the wilderness and the essence of a truly hearty, healthy meal.

What You’ll Need

  • 2 bunches of collard greens, rinsed and chopped
  • 2 tablespoons of olive oil
  • 2 teaspoons of koseret, dried and crushed
  • 2 red onions, finely chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon of cayenne pepper
  • Salt and black pepper to taste
ALLERGENS: Olive oil, Garlic

Method

Step One

Begin by preparing your collard greens. Ensure they are thoroughly rinsed to remove any dirt or grit. Once they are clean, chop them into bite-sized pieces.

Step Two

Heat the olive oil in a large sauté pan over medium heat. Once the oil is hot, add the chopped red onions to the pan. Sauté the onions until they become soft and translucent, which should take about 5 minutes.

Step Three

Add the minced garlic to the pan with the onions. Continue to sauté for another minute or until the garlic is fragrant.

Step Four

Add the koseret to the pan, stirring it into the onion and garlic. Let it cook for a minute to allow the flavors to meld. Then, add the chopped collard greens to the pan.

Step Five

Sauté the greens until they are wilted and tender, which should take about 5-10 minutes. Make sure to stir occasionally to ensure even cooking.

Step Six

Season the greens with the cayenne pepper, salt, and black pepper to your taste. Stir well to distribute the seasonings evenly throughout the greens. Serve hot and enjoy your Sautéed Greens with Koseret!
