What You’ll Need
- 12 West Indian Gherkins, halved
- 2 tablespoons of olive oil
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 2 tablespoons of freshly squeezed lime juice
- 1 red bell pepper, seeded and chopped
- 1 green bell pepper, seeded and chopped
- 2 fresh chilli peppers, seeded and minced
- Salt, to taste
- Black pepper, to taste
- Fresh cilantro leaves, for garnish
Method
Step One
Begin by preparing your ingredients. Halve the 12 West Indian Gherkins. Chop the large onion and bell peppers, and mince the garlic and chilli peppers. Make sure to remove the seeds from the peppers. Set these aside.
Step Two
Heat 2 tablespoons of olive oil in a large saucepan or wok over medium-high heat. Once heated, add the chopped onion. Cook until the onion is soft and translucent, which should take about 5 minutes.
Step Three
Add the minced garlic to the pan and sauté for another minute until the garlic is fragrant. Be careful not to burn the garlic, as this can create a bitter taste.
Step Four
Add the halved West Indian Gherkins, the chopped bell peppers, and the minced chilli peppers to the pan. Stir well to combine with the garlic and onion.
Step Five
Pour the 2 tablespoons of freshly squeezed lime juice over the vegetables. Season with salt and black pepper to taste. Continue to cook over medium-high heat, stirring regularly, until the gherkins are tender. This should take about 10 to 15 minutes.
