What You’ll Need

  • 1 pound of winged beans
  • 1/2 pound of bacon
  • 3 cloves of fresh garlic, minced
  • 4 tablespoons of Olive oil
  • 1 red bell pepper, finely diced
  • 2 medium tomatoes, chopped
  • 1 teaspoon of Kosher salt
  • 1/2 white sugar
  • 1 tablespoon of fish sauce
  • 1 tablespoon of soy sauce
  • 1 medium onion, finely chopped
  • 1/4 teaspoon of black pepper
ALLERGENS: Bacon, Garlic, Fish sauce, Soy sauce

Method

Step One

First, rinse the winged beans under cold water. Trim off the ends and cut them into two-inch pieces. Set aside.

Step Two

Heat a large pan over medium-high heat and add the bacon. Cook until it’s crispy and fully cooked. Transfer the bacon to a paper towel-lined plate to drain off the excess fat. Leave about 2 tablespoons of bacon grease in the pan.

Step Three

Add the olive oil to the pan with the bacon grease. Once hot, add the garlic and onion to the pan and sauté until they are soft and fragrant. This should take about 2-3 minutes.

Step Four

Add the red bell pepper and tomatoes to the pan and continue to sauté for another 2 minutes.

Step Five

Add the winged beans to the pan and stir well to combine all ingredients. Season with kosher salt, black pepper, sugar, fish sauce, and soy sauce. Stir well to ensure all the beans are well coated with the seasonings and sauces.

Step Six

Turn the heat down to low and cover the pan. Let it simmer for about 5 minutes or until the beans are cooked to your preferred tenderness.

Step Seven

Finally, chop the cooked bacon into small pieces and add to the pan. Give everything a final stir to combine, then remove from heat. Your Sautéed Winged Beans with Bacon is ready to be served!
