What You’ll Need

  • 3 pounds Yukon Gold potatoes
  • 1 cup whole milk
  • 4 tablespoons unsalted butter
  • 1/2 cup light cream
  • 1/2 cup finely chopped scallions
  • Salt, to taste
  • Pepper, to taste

Method

Step One

Begin by peeling the 3 pounds of Yukon Gold potatoes and then cut them into large chunks. Place these chunks in a large saucepan and add enough water to cover them. Bring this to a boil over a high heat.

Step Two

Reduce the heat to medium and let it simmer. Cook the potatoes until they are tender, this will take about 15-20 minutes. You can check if they’re done by poking them with a fork. If the fork enters easily, they are done.

Step Three

Once the potatoes are done, drain the water using a colander and then return the potatoes back to the saucepan. Mash them until they are smooth.

Step Four

In a small saucepan, combine 1 cup of whole milk, 4 tablespoons of unsalted butter, and 1/2 cup of light cream. Heat this mixture over a medium heat until the butter has melted and the mixture is hot. Do not let it boil.

Step Five
