What You’ll Need

  • 6 medium Scorzoneras
  • 1.5 cups of Water
  • Juice of 1 Lemon
  • 1/4 cup Olive Oil
  • 3 tablespoons White Wine Vinegar
  • 1 small Red Onion, thinly sliced
  • 2 Oranges, peeled and sliced
  • 2 tablespoons Sugar
  • 1/4 teaspoon Salt
  • A pinch of Pepper
  • 1/4 cup fresh Mint leaves, chopped

Method

Step One

Firstly, peel the scorzoneras and drop them into a pot of boiling water. Lower the heat and let them simmer until they become soft. This will take about 20-25 minutes.

Step Two

In a separate pot, bring the 1.5 cups of water to a boil. Once boiling, add the peeled and sliced oranges and let them boil for about 10 minutes. Afterwards, strain the oranges and set aside, keeping the liquid in the pot.

Step Three

In the pot with the orange-infused water, add the juice of one lemon, a quarter cup of olive oil, three tablespoons of white wine vinegar, 2 tablespoons of sugar, a quarter teaspoon of salt and a pinch of pepper. Heat this mixture to a simmer and stir until the sugar is completely dissolved. Remove from the heat and set aside once done.

Step Four

Once the scorzoneras are soft, remove them from the water and let them cool for a bit. Then cut them into thin slices and add them to the bowl with the thinly sliced red onion.

Step Five

Pour the cooled dressing over the scorzonera and onion mix, then add the boiled orange slices. Mix everything together gently.

Step Six

Finally, sprinkle the chopped fresh mint leaves over the salad and mix lightly. Your scorzonera salad with lemon is ready to be served!
