What You’ll Need

  • 1 1/2 cups of whole grain couscous
  • 3 cups of seafood broth
  • 2 tablespoons of olive oil
  • 1 large onion, finely chopped
  • 4 cloves of garlic, minced
  • 1 tablespoon of cumin
  • 1 tablespoon of paprika
  • 1 teaspoon of turmeric
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon of ground ginger
  • 1lb of mixed seafood (such as prawns, mussels and squid)
  • 1 lemon, zest and juice
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish

Method

Step One

Start by bringing the seafood broth to a boil in a large pot. Once boiling, stir in the couscous, cover the pot, and remove it from the heat. Allow the couscous to absorb the broth for about 5-7 minutes.

Step Two

While the couscous is cooking, heat the olive oil in a large skillet over medium-high heat. Add the finely chopped onion and minced garlic to the skillet and cook until they become translucent and aromatic. This should take about 5 minutes.

Step Three

Next, stir in the cumin, paprika, turmeric, cinnamon, and ground ginger. Continue cooking the spice mixture for another 2 minutes to allow the spices to bloom and fully release their flavors.

Step Four

Add the mixed seafood to the skillet, stirring continuously until it is thoroughly cooked. This should take about 5-8 minutes depending on the types of seafood used. Season the seafood with salt and pepper to taste during the cooking process.

Step Five

Fluff the cooked couscous with a fork and stir in the seafood mixture. Add the zest and juice of one lemon, and give it a good mix until everything is well combined.
