Seared Steak with Dorrigo Pepper Seasoning is one of my all-time favorite recipes. As someone who hails from a family with Atlantic roots and Nigerian parents, I cherish creating dishes that reflect not just the Southern warmth but also the zester stories from West Africa. This recipe finds its rightful place in my Afro-Southern fusion cooking, not simply because it embodies a perfect blend of the two culinary worlds, but because it calls for appreciation for a unique ingredient – the Dorrigo Pepper from Australia.

Seared Steak with Dorrigo Pepper Seasoning

The Allure of Dorrigo Pepper

Doroigo Pepper, often called the ‘mountain pepper’, boasts a wonderfully warm and spicy flavor profiles, with subtle hints of fruits and an back-note of eucalyptus. What I find particularly fascinating about Dorrigo pepper is its crunchy texture when bite into, something that blends exceptionally well with the tenderness of the seared steak in the recipe.

Health Benefits

Did I mention that Dorrigo pepper comes with impressive health rewards too? Thanks to its high anti-oxidant levels, it may aid in reducing inflammation and boosting immunity. Plus, the olive oil used in the searing process comes packed with monounsaturated fats and polyphenols, known to promote heart health.

Afro-Southern Fusion At Its Best

Every time I prepare the Seared Steak with Dorrigo Pepper Seasoning, I can’t help but be reminded of both the down-to-earth Southern steaks and the boldly seasoned Nigerian Suya. It’s as if this recipe borrows the best from both worlds, culminating in a dish that is both comforting, hearty and subtly exotic. I’d even dare to go as far as to say this would pair wonderfully with a side of collard greens for a little extra Southern flair.

And that’s why this recipe has a special place in both my heart and my kitchen. It’s more than just a meal, it’s a celebration of culinary heritages, of simple healthy ingredients coming together in a delicious harmony, and of cultures connecting via an unforgettable taste experience.

What You’ll Need

  • 6 pieces of 8-ounce steak cuts of your choice
  • 2 tablespoons of Dorrigo pepper

  • 4 tablespoons of unsalted butter
ALLERGENS:

Method

Step One

Start by preparing the steak. Each steak piece should be dabbed with a dry paper towel to remove any excess moisture. Sprinkle each steak piece on both sides with a generous amount of the Dorrigo pepper and salt. Make sure each piece is evenly covered. Set the seasoned steak aside to allow the seasoning to infuse into the steak for a few minutes.

Step Two

In a large skillet, heat the olive oil over medium-high heat. Once the oil is heated and shimmering, add the seasoned steak pieces. Sear the steaks for about 4-5 minutes on each side, depending on your preferred level of doneness. Once properly seared, remove the steaks from the skillet and set them aside, covered, to keep warm.

Step Three

In the same skillet, add the minced garlic, fresh rosemary leaves, and thyme leaves. Stir them frequently and cook until the garlic turns golden brown. Do not let the garlic burn, as it will make the seasoning bitter.

Step Four

Add the unsalted butter into the skillet, and let it melt, while scraping the bottom of the skillet to capture all the flavorful bits stuck on the bottom. This creates a rich, flavorful pan sauce. Keep stirring until the butter is completely melted.

Step Five

Return the seared steaks back to the skillet and baste them with this flavorful butter mixture. Cook for an additional 1-2 minutes, ensuring the steaks are well coated with the sauce. Remove from heat.

Step Six

Serve the seared steaks immediately, spooning over any remaining butter sauce from the skillet. This steak pairs wonderfully with roasted vegetables or a fresh salad. Enjoy your Seared Steak with Dorrigo Pepper Seasoning!
