What You’ll Need

  • 6 cups of Shepherd’s purse leaves, thoroughly washed
  • 6 large eggs
  • 1/4 cup of soy sauce
  • 1 tablespoon of white sugar
  • 1 medium red bell pepper, sliced into thin strips
  • 2 medium carrots, peeled and thinly sliced
  • 4 cloves of garlic, finely chopped
  • 2 tablespoons of olive oil
  • 1 tablespoon of ginger, grated
  • 2 fruits of medium-sized tomatoes, chopped
  • Salt, to taste
  • Pepper, to taste

Method

Step One

In a large bowl, beat the eggs well. Set them aside for later.

Step Two

Heat the olive oil in a large pan over medium heat. Once the oil is hot, add the finely chopped garlic and grated ginger. Stir them in the oil until they become fragrant but be careful not to burn them.

Step Three

Add the sliced red bell pepper and chopped tomatoes to the pan. Stir-fry them until the tomatoes start to break down and the red peppers soften.

Step Four

Next, add the carrots to the pan. Continue stir-frying the vegetables until the carrots have softened.

Step Five

Pour in the beaten eggs into the pan. Allow the eggs to cook until they’re scrambled and fully cooked through. Make sure to stir continuously to prevent the eggs from sticking to the pan.

Step Six

Now add the Shepherd’s purse leaves to the pan. Continue to stir-fry until the leaves wilt and soften, it will take approximately 2-3 minutes.

Step Seven

Pour the soy sauce over the stir-fry, followed by the white sugar. Stir these in until they’re evenly distributed amongst the stir-fry.

Step Eight

Finally, season your stir-fry with salt and pepper to taste. Stir well to distribute the seasonings evenly.
