What You’ll Need

  • 4 cups cooked jasmine rice
  • 1 pound fresh siling habas peppers
  • 1 large ripe pineapple, cut into small cubes
  • 1 large ripe mango, cut into small cubes
  • 2 medium ripe bananas, sliced
  • 3 cloves garlic, minced
  • 1 large red onion, chopped
  • 2 large scallions, chopped
  • 2 large eggs, beaten
  • 3 tablespoons vegetable oil
  • 1 cup cooked ham, diced
  • 1 cup cooked shrimp, peeled and deveined
  • 1/3 cup soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1/4 teaspoon ground black pepper
  • 1/4 cup fresh cilantro leaves, for garnish

Method

Step One

In a large pan or wok, heat up 3 tablespoons of vegetable oil over medium heat. Once the oil is hot, add the 3 cloves of minced garlic and chopped red onion, and stir until they are slightly brown and fragrant.

Step Two

Next, add the beaten eggs to the pan. Let them sit for about a minute, allowing them to set. Once the eggs have mostly set, stir them into the garlic and onion.

Step Three

Add the diced ham and cooked shrimp to the pan, stirring well to ensure all ingredients are evenly distributed. Cook for a couple of minutes until the shrimp are pink and the ham is heated through.

Step Four

Toss in the sliced siling habas peppers and scallions into your pan. Stir fry for another two minutes until they are slightly soft.

Step Five

Pour the cooked jasmine rice into the pan and mix well to combine with the other ingredients.

Step Six

In a separate bowl, combine the soy sauce, fish sauce, sugar and black pepper. Mix well and pour this mixture into the pan with the rice. Stir everything to evenly distribute the sauce.

Step Seven

Place the pineapple cubes, mango cubes and banana slices into the pan. Mix well and continue to stir fry for another 3-4 minutes, or until all ingredients are thoroughly combined and heated up.

Step Eight

Turn off the heat and transfer the Silang Habas Fried Rice into a large serving dish. Garnish with fresh cilantro leaves before serving.
