What You’ll Need

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chopped skirret
  • 3 large potatoes, chopped
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 cups mixed fresh fruits (like berries, apples, bananas, etc.), chopped
  • 1 tablespoon fresh lemon juice
  • Handful of fresh basil leaves, chopped
  • 1/2 cup heavy cream
ALLERGENS: Onion, garlic, skirret, vegetable broth, mixed fresh fruits (like berries, apples, bananas, etc.), heavy cream

Method

Step One


Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onions become translucent.

Step Two


Add the chopped skirret to the pot and cook until it starts to soften, this should take around 5 minutes.

Step Three


Add in the chopped potatoes, stirring to combine with the onions and skirret. Cook for another 5 minutes.

Step Four


Pour in the vegetable broth, and season with the salt and black pepper. Stir well to combine, then bring the mixture to a boil.

Step Five


Once boiling, reduce the heat to low and let the soup simmer until the vegetables are tender. This should take about 20 minutes.

While the soup is simmering, chop your mixed fresh fruits and set them aside.
