What You’ll Need

  • 1.5 pounds Smoked Salmon
  • 3 ripe avocados
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 cups mixed salad greens
  • 1/2 cup thinly sliced red onion
  • 1/2 cup chopped fresh dill
  • 1/4 cup capers

Method

Step One

Begin by preparing the avocados. Cut each avocado in half, remove the pit with a spoon, then scoop out the flesh and slice Avocados into thin strips. Place the slices in a large bowl and set aside.

Step Two

In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to create your dressing. Pour this over the sliced avocados, gently tossing to ensure all of the avocado is coated.

Step Three

Add the mixed salad greens to the bowl containing the avocado and dressing. Carefully fold the greens into the avocado and dressing, making sure that the salad greens are well-coated.

Step Four

Next, it’s time to add the smoked salmon to the salad. Tear or cut the smoked salmon into bite-sized pieces and add it to the salad bowl. Follow this up with the thinly sliced red onion, chopped fresh dill, and capers. Toss everything together to combine.

Step Five
