What You’ll Need

  • 12 oz smoked salmon
  • 1 lb celtuce (Chinese lettuce)
  • 16 oz pasta of your choice
  • 3 tbsp butter
  • 2 cloves of garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/3 cup chopped fresh dill
  • 1 lemon, zested and juiced
ALLERGENS: Fish (smoked salmon), wheat (pasta), milk (butter, heavy cream, Parmesan cheese)

Method

Step One

Prepare a large pot of salted water and bring it to a boil. Once boiling, add your pasta and cook until al dente as per the package instructions. When the pasta is cooked, reserve 1/2 cup of pasta water and set it aside for later use, then drain the pasta and set it aside too.

Step Two

Whilst the pasta is cooking, prepare the celtuce. Trim off the ends, peel off the hard outer skin, and slice it into thin pieces. Set these aside.

Step Three

Heat butter in a large saucepan over medium heat. Once the butter is melted and starts to lightly bubble, add the minced garlic and stir for about a minute until it becomes fragrant.

Step Four

Add in the sliced celtuce and sauté it until it starts to soften. This should take about 5 to 7 minutes.

Step Five

Reduce the heat to low and stir in the heavy cream, grated Parmesan, salt, and pepper. Allow this to simmer until the Parmesan cheese has melted and the sauce has thickened. This should take about 2-3 minutes.
