What You’ll Need

  • 1.5 lbs of Sokos sausage
  • 3 bell peppers (green, yellow, red)
  • 2 large onions
  • 4 cloves of garlic
  • 1 can of crushed tomatoes (28 oz)
  • 1 teaspoon of oregano
  • 1 teaspoon of basil
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of crushed red pepper flakes
  • 2 tablespoons of olive oil
  • 1/4 cup of fresh parsley, chopped

Method

Step One

Start by slicing the Sokos sausages into 1/2 inch thick rounds.

Step Two

Next, seed and slice the bell peppers, and peel and slice the onions. You should aim to keep the slices around the same size for even cooking. Mince the garlic.

Step Three

In a large skillet or sauté pan, heat the olive oil over medium heat. Once the oil is hot, add the sausage rounds. Cook them until they’re browned on all sides, which should take about 5-7 minutes.

Step Four

Next, add the pepper and onion slices to the pan. Stir them around to fully coat them in the oil and sausage drippings. Cook this mixture, while stirring occasionally, for roughly 20 minutes – until the vegetables are soft and have begun to caramelize slightly.

Step Five

Add the minced garlic, oregano, basil, salt, black pepper, and red pepper flakes. Stir the mixture well, and let it cook for another minute or so – just until you can really smell the garlic and herbs.

Step Six

Now, pour in the can of crushed tomatoes. Stir everything together well, making sure the sausage and peppers are fully covered by the tomato sauce. Simmer this for 15 minutes.

Step Seven

Finally, stir in the fresh parsley, and let everything cook for another minute just to heat it. Your Sokos Sausage and Peppers is now ready to serve!
