What You’ll Need

  • 6 fillets of Sole fish
  • 1/2 cup of all-purpose flour
  • Salt to taste
  • Pepper to taste
  • 4 tablespoons of unsalted butter
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • 1 cup of white wine
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 2 tablespoons of capers, rinsed
  • 1/4 cup of chopped fresh parsley

Method

Step One

Begin by patting your 6 fillets of Sole fish dry with a paper towel. Once they are dry, season them with salt and pepper to taste.

Step Two

Dredge each fillet in the 1/2 cup of all-purpose flour, making sure to shake off any excess.

Step Three

Heat 2 tablespoons of unsalted butter along with 1 tablespoon of olive oil in a large pan over medium heat. Once the butter has melted and the oil is hot, add the fillets to the pan.

Step Four

Cook the fillets until they are golden brown on each side. This will take around 2 minutes per side. Once cooked, remove them from the pan and set them aside.

Step Five

Add the minced garlic to the same pan and sauté it until it becomes fragrant. This should take about 1 minute. Then add 1 cup of white wine, the juice of 2 lemons, the lemon zest and 2 tablespoons of capers. Let this mixture simmer until it reduces by half.

Step Six

Once the sauce has reduced, add the remaining 2 tablespoons of butter and stir until it’s melted. Return the fish fillets to the pan, spooning the sauce over them. Let them cook in the sauce for a few minutes so the flavors can meld together.

Step Seven

Remove the pan from the heat and sprinkle 1/4 cup of chopped fresh parsley over the fish. Serve the fish hot, making sure to spoon some extra sauce over each fillet for added flavor.
