What You’ll Need

  • 1 cup of dried sorrel leaves
  • 8 cups of water
  • 2 cups of mixed fresh fruits (like strawberries, blueberries, peaches)
  • 1.5 cups of granulated sugar
  • 1 stick of cinnamon
  • 6 cloves
  • 1 tablespoon of grated ginger
  • 1 tablespoon of orange zest
  • 1/2 cup of orange juice
  • 3 tablespoons of lemon juice
  • 1/4 teaspoon of salt
  • 1/2 cup of rum (optional)
ALLERGENS: Strawberries, blueberries, peaches, orange zest, orange juice, lemon juice

Method

Step One

Pour the 1 cup of dried sorrel leaves in a large pot and add the 8 cups of water. Bring this mixture to a boil over high heat.

Step Two

Once boiling, reduce the heat to low and let it simmer for about 30 minutes to allow the flavors to develop.

Step Three

Add the 2 cups of mixed fresh fruits, 1.5 cups of granulated sugar, 1 stick of cinnamon, 6 cloves and 1 tablespoon each of ginger and orange zest to the pot. Stir these ingredients well to mix in.

Step Four

Cover the pot with a lid and let the soup simmer for another 45 minutes, making sure to stir the mixture occasionally.

Step Five

Remove the pot from the heat and let the soup cool down a bit. Then strain the soup using a sieve to remove the solids and pour the liquid back into the pot.

Step Six

Stir in 1/2 cup of orange juice, 3 tablespoons of lemon juice, 1/4 teaspoon of salt and 1/2 cup of rum (if using). Allow the soup to cool completely.

Step Seven

Once the soup is cooled, refrigerate it for at least two hours or overnight before serving. This will allow the flavors to blend together and intensify.

Step Eight

Serve your Sorrel Soup chilled, garnishing it with some fresh fruit and mint leaves if desired. Enjoy!
