What You’ll Need
- For Soy Patties:
- 1 cup of soy beans
- 1 large onion, finely chopped
- 2 cloves of garlic, finely chopped
- 1 large egg
- 1/2 cup of bread crumbs
- 1/2 cup of milk
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of vegetable oil
- For Roasted Potatoes:
- 2 lb of new potatoes
- 2 tablespoons of olive oil
- Salt and pepper to taste
- For Bearnaise Sauce:
- 2 tablespoons of white wine vinegar
- 2 tablespoons of dry white wine
- 2 tablespoons of finely chopped shallot
- 2 tablespoons of chopped fresh tarragon
- 3 egg yolks
- 1 cup of melted unsalted butter
- Salt and pepper to taste
Method
Step One
Let’s start by preparing the soy patties. Soak 1 cup of soy beans in water and leave them overnight. The next day, drain the water and mash the soy beans into a smooth paste.
Step Two
In a bowl, mix finely chopped onion and garlic into the mashed soybeans. To this mixture, add 1 large egg, 1/2 cup of bread crumbs, and 1/2 cup of milk. Season it with 1/2 teaspoon of salt and a 1/4 teaspoon of black pepper. Mix everything together to form a dough-like consistency.
Step Three
Divide the mixture into equal portions and shape them into patties. Heat 2 tablespoons of vegetable oil in a pan and cook the patties on both sides until they are golden brown. Once done, place them on a plate lined with a paper towel to remove excess oil.
Step Four
Now onto the roasted potatoes. Preheat your oven to 400 degrees F (200 degrees C). Toss 2 lb of new potatoes with 2 tablespoons of olive oil, salt and pepper to taste. Spread them out in a single layer on a baking tray and roast in the oven for about 45 minutes or until they become crispy and nice and browned.
Step Five
Lastly, it’s time to make the Bearnaise sauce. In a saucepan, mix 2 tablespoons of white wine vinegar, 2 tablespoons of dry white wine, 2 tablespoons of finely chopped shallot, and 2 tablespoons of chopped fresh tarragon. Simmer the mixture on low heat until it is reduced by half. Let it cool.
Step Six
In a different bowl, whisk 3 egg yolks until they become frothy. Slowly incorporate the cooled wine mixture into the yolks while continuously whisking to avoid curdling the eggs. Add 1 cup of melted unsalted butter, a little at a time, until the sauce is thick and creamy. Season with salt and pepper.
Step Seven
