What You’ll Need

  • 1 1/2 cups apple juice
  • 1 cup finely chopped fresh spearmint leaves
  • 2 tablespoons lemon juice
  • 3 1/2 cups granulated sugar
  • 3 ounces liquid pectin
  • 2-3 drops green food coloring (optional)

Method

Step One:

In a large saucepan, combine the apple juice and finely chopped fresh spearmint leaves. Bring the mixture to a boil over medium heat.

Step Two:

Remove the saucepan from heat and let the mixture steep for about 10 minutes. After steeping, strain the mixture through a fine mesh sieve or cheesecloth to remove the mint leaves. Return the strained liquid to the saucepan.

Step Three:

Add the lemon juice and granulated sugar to the saucepan with the strained liquid. Bring the mixture to a full rolling boil over high heat, stirring constantly to dissolve the sugar.

Step Four:

Add the liquid pectin to the boiling mixture. Return to a full rolling boil and boil for exactly 1 minute, stirring constantly. Remove the saucepan from heat.

Step Five:

If desired, add 2-3 drops of green food coloring to the mixture and stir well. Skim off any foam that may have formed on the surface of the jelly.

Step Six:

Ladle the hot jelly into sterilized jars, leaving about 1/4 inch headspace. Wipe the rims of the jars with a clean, damp cloth, and place sterilized lids on top. Secure the lids with metal bands.

Step Seven:

Process the jars in a boiling water bath for 5 minutes. Carefully remove the jars from the water and let them cool completely at room temperature. Store the sealed jars in a cool, dark place. Once opened, refrigerate and use within a month.
