What You’ll Need

  • 6 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons horopito spice
  • 1 teaspoon ground paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cinnamon
  • Salt to taste
  • Black pepper to taste
  • 3 cups mixed vegetables (broccoli, bell peppers, carrots, etc.)

  • 1 cup pineapple chunks
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
ALLERGENS: Chicken

Method

Step One

Start off by preheating your oven to 375°F (190°C). Next, in a large bowl, combine the horopito spice, paprika, cumin, onion powder, cinnamon, salt, and black pepper. Mix these ingredients together until they are well combined.

Step Two

Place your chicken breasts in the bowl with the spice mix. Drizzle the olive oil onto the chicken, then toss the chicken in the spice mix until it is fully coated. Arrange the chicken on a baking sheet.

Step Three

Bake the chicken in the preheated oven for about 25-30 minutes, or until it is fully cooked through and no longer pink in the center.

Step Four

While the chicken is cooking, let’s prepare the plum and pineapple salsa. In a medium bowl, combine the chopped plums, pineapple chunks, lime juice, lime zest, brown sugar, and cornstarch. Stir together until the fruit is coated in the lime juice and sugar.

Step Five

Heat a large sauté pan over medium heat. Add your mixed vegetables to the pan and sauté them until they are tender, about 5-7 minutes.

Step Six

When the chicken is done, remove it from the oven and let it rest for a few minutes. Serve the spiced horopito chicken with a side of the sautéed vegetables, and top with the plum and pineapple salsa. Enjoy your delicious and healthy meal!
