I have always been captivated by the vibrant and diverse Singaporean cuisine. Much like the country itself, their dishes are a melting pot of flavors, characterized by a fusion of traditions, cultures, and tastes. Gravitating towards these flavors, I dared to venture on this culinary trip by creating Spicy Beef Ribs that will undoubtedly transport you to the bustling hawker stands of Singapore.

If you’re already familiar with Singaporean style Chili Crab, this recipe will definitely tickle your tastebuds. While it’s not a typical Boston seafood dish or a plate out of Ireland, it beautifully encapsulates my experimental spirit when it comes to cooking.

Inspiration and Pairings

While I enjoy creating recipes based on my Irish roots and the myriad of flavors coming out of New England’s seafood, my culinary journey expands far beyond these boundaries. This recipe was actually inspired by Chef Floyd Cardoz’s rendition of Beef Rendang, a traditional spicy meat dish originating from Singapore’s neighboring country, Indonesia. I’ve added my own twist to it, incorporating the spicy flavors of sriracha and the sweetness of honey.

This Spicy Beef Ribs is a standalone dish, but if you’re looking to create a complete meal, it pairs excellently with a simple Scallion Pancake and a cooling Cucumber Salad to balance the heat of the ribs.

What You’ll Need

  • 3 pounds of beef short ribs
  • 2 tablespoons of olive oil
  • 1 cup of soy sauce
  • 4 tablespoons of sriracha sauce
  • 3 tablespoons of honey
  • 1 tablespoon of sesame oil
  • 1/4 cup of brown sugar
  • 4 cloves of minced garlic
  • 1 tablespoon of minced ginger
  • 1 teaspoon of red pepper flakes
  • 2 stalks of chopped green onions
  • 1/4 cup of fresh chopped cilantro
  • 2 cups of beef broth
  • 1 tablespoon of cornstarch
ALLERGENS: soy, sesame

Method

Step One

Begin by warming up the olive oil in a large pan over high heat. Add in the beef short ribs and sear them on all sides to a brown color. This will take about a minute on each side. Once done, transfer the ribs to a slow cooker.

Step Two

In a mixing bowl combine the soy sauce, sriracha sauce, honey, sesame oil, brown sugar, minced garlic, minced ginger, and red pepper flakes. Stir them together until well combined.

Step Three

Pour the combined sauce over the beef ribs in the slow cooker. Then, add the beef broth so the ribs are almost fully submerged.

Step Four

Cover the slow cooker and cook on low for about 7 to 8 hours, or until the beef is tender and almost falling off the bone.

Step Five

An hour before the ribs are done, remove about 1 cup of the liquid from the slow cooker and pour it into a small sauce pot. Bring it to a simmer over medium heat.

Step Six

Whisk in the cornstarch and continue stirring until the sauce thickens. Pour it back into the slow cooker and stir to coat the ribs.

Step Seven

Finish your spicy beef ribs by sprinkling chopped green onions and fresh chopped cilantro over them before serving.
