What You’ll Need

  • 2 Elephant Foot Yams (approximately 1.5 lbs total)
  • 2 teaspoons of Turmeric Powder
  • 2 teaspoons of Cumin Seeds
  • 1 teaspoon of Mustard Seeds
  • 2 Red Chilies
  • 1 cup of finely chopped Onion
  • 1 tablespoon of minced Garlic
  • 1 tablespoon of minced Ginger
  • 6 Curry Leaves
  • 1/4 cup of Vegetable Oil
  • Salt to taste
  • 2 tablespoons of Lemon Juice

Method

Step One

First, thoroughly wash the Elephant Foot Yams and remove the skin. Cut them into small cubes and immerse them in water mixed with a teaspoon of Turmeric powder to prevent discoloration.

Step Two

Heat the Vegetable Oil in a large frying pan on medium heat. Add the Mustard Seeds and Cumin seeds. Stir them around for a few seconds until they start to pop.

Step Three

Slice the Red Chilies and add them to the pan, followed by the finely chopped Onion. Sauté until the Onion turns translucent.

Step Four

Next, add the minced Garlic, minced Ginger, and the Curry Leaves to the pan. Stir well for about a minute until the spices are well blended.

Step Five

Now drain the Yams and add them to the pan. Sprinkle a teaspoon of Turmeric powder and Salt to taste.

Step Six

Cover the pan and let the Yams cook on low heat for about 15-20 minutes or until they are cooked through and tender. Make sure to stir occasionally in between to ensure even cooking.

Step Seven

Finally, drizzle the Lemon Juice over the Yams and give it a good stir. Remove from heat and serve your Spicy Elephant Foot Yam Stir Fry hot!
