What You’ll Need

  • 1 cup of spelt grains
  • 1 1/2 cup of chickpeas, soaked overnight
  • 2 cloves of garlic
  • Juice of 2 lemons
  • 4 tablespoons of tahini
  • 1 tablespoon of grains of selim, crushed
  • 1 teaspoon of cayenne pepper
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of sea salt
  • 1/2 cup of extra virgin olive oil
  • 1/4 cup of water, as needed
  • For garnish, handful of fresh parsley leaves, chopped finely
  • 1 teaspoon of grains of selim for sprinkling
ALLERGENS: Spelt, Chickpeas, Garlic, Tahini

Method

Step One

Start by cooking the spelt grains. Place it in a saucepan, cover with water and bring to a boil. Reduce the heat, cover, and simmer for approximately an hour or until the grains are tender. Once cooked, drain and set aside to cool.

Step Two

Rinse the soaked chickpeas and place them in a large pot. Cover with fresh water and bring to a boil. Reduce the heat, cover, and let it simmer, stirring occasionally, until chickpeas are soft. This will approximately take 2 hours. Once cooked, drain and set aside to cool.

Step Three

In a food processor or high-powered blender, combine the cooled chickpeas and spelt grains, peeled garlic cloves, lemon juice, tahini, crushed grains of selim, cayenne pepper, smoked paprika, and sea salt.

Step Four

Blend the mixture until it’s smooth and creamy. While the food processor is running, slowly pour the olive oil into the feed tube, followed by the water in small intervals. You may need to stop and scrape down the sides of the blender a few times.

Step Five

Taste and adjust the seasonings, adding more salt, lemon juice, or spices if needed. If the hummus is too thick, add more water or oil.

Step Six

Spoon the hummus into a serving dish and smooth the surface with the back of a spoon. For garnish, sprinkle with a few more grains of selim, chopped fresh parsley leaves, and a drizzle of olive oil. Serve immediately with warm pita bread. Enjoy your Spicy Grains of Selim Hummus!
