The Spicy Maize Fritters recipe is one that holds a special place in my heart. Growing up in the rural countryside of Montana, maize was a staple part of the diet, cherished by both the ranchers and Native American communities. Over time, I’ve refined my maize recipes, incorporating elements of these traditions, creating unique, flavorful dishes.

Spicy Maize Fritters

A Flavorful Fusion

These Spicy Maize Fritters encapsulate the essence of rural Montana cooking. The combination of corn kernels, jalapeno peppers, and a blend of spices, create a burst of flavor with every bite. The sweet and spicy combination is inspired by the local love for huckleberry pies, and the heat of the jalapenos mirrors the spiciness found in many rancher’s favorite dishes.

The good news is, not only are these maize fritters delicious, they’re also packed with health benefits. Corn is a great source of vitamins and minerals, including high levels of B vitamins and Vitamin C. Plus, the cayenne pepper in the mix has been known to boost metabolism. Perfect as a Stand-Alone or a Side

What I further love about this Spicy Maize Fritters recipe is its versatility. Enjoy them on their own as a light, flavor-packed snack, or serve them alongside a hearty Venison Steak, just the way it’s loved in Montana. If you’re really out to impress, why not serve them with a Bison burger? Their crunch and flavor make for an amazing contrast to the meaty, hearty mains.

The addition of the fresh mixed berries and maple syrup turn this traditional snack into a gourmet delight. The sweet, tartness of the berries pairs beautifully with the rich fritters. It’s a combination hard to resist, one that keeps me making and loving this dish time and again.

What You’ll Need

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon paprika
  • 1 cup fresh or frozen corn kernels
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon finely chopped jalapeno pepper
  • Vegetable oil, for frying
  • 1/2 cup confectioners’ sugar, for dusting
  • 1 cup fresh mixed berries, for serving
  • Maple syrup, for serving
ALLERGENS: Wheat (in all-purpose flour), Egg, Milk (in buttermilk and butter)

Method

Step One

In a large mixing bowl, combine 1 cup all-purpose flour, 2 tablespoons of granulated sugar, 1 teaspoon of baking powder, 1/2 teaspoon of salt, 1/2 teaspoon of cayenne pepper, and 1/2 teaspoon of paprika. Mix thoroughly to ensure all ingredients are well incorporated.

Step Two

In a separate bowl, mix 1 cup of corn kernels, 1 large egg, 1/2 cup of buttermilk, 1/4 cup of unsalted melted butter, and 1 tablespoon of finely chopped jalapeno pepper. Stir these ingredients until they are combined.

Step Three

Gradually add your wet ingredients to your dry ingredients, mixing gently. Ensure to mix well enough so that no pockets of dry mixture are left but do not overmix to prevent your fritters from becoming too tough.

Step Four

Heat a generous amount of vegetable oil in a frying pan over medium heat. Once heated, drop tablespoons of the maize fritter mixture into the hot oil. Cook each side for about 2-3 minutes or until each side is golden brown.

Step Five

Using a slotted spoon, carefully remove the fritters from the oil and let them drain on a plate lined with a paper towel. This process will remove the excess oil from the fritters.

Step Six

While fritters are still warm, dust each fritter with the confectioners’ sugar.

Step Seven

To serve, plate your spicy maize fritters and garnish with fresh mixed berries. Drizzle with maple syrup for added sweetness. Enjoy while hot.
