What You’ll Need

  • 1 cup Moth Beans, soaked overnight and then boiled
  • 2 fresh Apples, diced
  • 1 cup of Grapes
  • 1 Orange, peeled and sectioned
  • 2 Kiwis, peeled and chopped
  • 1 cup of Pomegranate Seeds
  • 1/4 cup of fresh Mint Leaves, chopped
  • 1/4 cup fresh Cilantro, chopped
  • 1 small Red Onion, finely chopped
  • 1 Jalapeno Pepper, finely chopped
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Olive Oil
  • 1 teaspoon Red Chili Flakes
  • 1/2 teaspoon of Black Pepper
  • Salt to taste

Method

Step One:

Take the moth beans that you have soaked overnight and boil them in a pot of water until they are tender. Drain them and set them aside to cool.

Step Two:

While the beans are cooling, you can start preparing the fruits. Dice two fresh apples and set them aside. Also, peel and section one orange, chop two kiwis, and deseed one cup of pomegranate. Combine all these fruits in a large mixing bowl.

Step Three:

Add a cup of whole grapes to the bowl with the already chopped fruits.

Step Four:

Move to the herbs and spices now. Chop 1/4 cup of fresh mint leaves and 1/4 cup of fresh cilantro. Add these to the bowl. Also, finely chop 1 small red onion and 1 jalapeno pepper to include in the salad.

Step Five:

Now add the cooled moth beans to the mixing bowl and once again, mix everything well.

Step Six:

Prepare the salad dressing separately. Mix together 2 tablespoons of lemon juice, 1 tablespoon of olive oil, 1 teaspoon of red chili flakes, 1/2 teaspoon of black pepper and salt to taste. Ensure all these ingredients are well combined.

Step Seven:

Pour this dressing over the salad in the large mixing bowl. Toss everything well to ensure the dressing is evenly distributed throughout the salad.

Step Eight:
