Why I Love British Spicy Mushroom and Spinach Stir-Fry
As a Southern belle whose roots are deep in Charleston, South Carolina, you might find it unexpected for me to feature a British favorite, the Spicy Mushroom and Spinach Stir-Fry. However, my culinary palette and curiosity stretches wider than my hometown’s borders and I delight in sharing dishes from all corners of the globe.
A Fusion of Flavors
What draws me in particular to this recipe is the blend of earthy mushrooms and fresh spinach shot through with the kick of red chilies, all rounded with a splash of umami-rich sauces. It’s a melting pot of flavors that makes the Spicy Mushroom and Spinach Stir-Fry a veritable feast for the taste buds. Inspired by the culinary stylings of Chef Jamie Oliver, who has championed the bold and beautiful character of British cuisine, this stir-fry is a nod to unconventional, yet undeniably delectable pairing of ingredients.
A Perfect Pair
Roots and traditions not withstanding, I believe a great dish doesn’t need to stand alone. This stir-fry is perfect as a hearty main, but also pairs wonderfully with grilled shrimp or pan-seared scallops for a complete meal. Those who appreciate a little Southern spin may also find that it pairs beautifully with a mess of cornbread, a staple in my South Carolina home. The hearty mushrooms and vibrant spinach providing a delightful contrast to the warm sweetness of the cornbread.
Cooking for me is not just about upholding tradition, it’s about expanding, exploring and above all, enjoying food. And it’s my commitment to this philosophy, that makes me absolutely love this recipe, and why I am certain you’ll love it too.
What You’ll Need
- 2 tablespoons vegetable oil
- 6 garlic cloves, finely sliced
- 2 red chilies, deseeded and finely chopped
- 2 pound mixed mushrooms, cleaned and sliced
- 10 ounces spinach washed
- 2 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon fish sauce
- 2 teaspoon sugar
- 1/4 cup water
- 3 spring onions, sliced
- Freshly-ground black pepper
Method
Step One
Start by preheating your wok or large frying pan over high heat. Once heated, add the vegetable oil to coat the base of the pan.
Step Two
Add the sliced garlic and finely chopped red chilies to the pan. Stir-fry them for roughly 30 seconds, just until they become fragrant. Be careful not to burn the garlic.
Step Three
Now, add the cleaned and sliced mushrooms to the pan. Stir-fry them for about 3-4 minutes or until they start to soften. The mushrooms may release a bit of liquid, but that’s okay.
Step Four
After the mushrooms have softened, add the washed spinach. Continue to stir-fry everything together until the spinach has wilted.
Step Five
In a separate bowl, combine the soy sauce, oyster sauce, fish sauce, sugar, and water. Stir well until the sugar completely dissolves.
Step Six
Once mixed, pour the sauce into the wok or pan. Mix it well with the mushrooms and spinach and allow everything to cook together for another 2 minutes.
Step Seven
Afterwards, add the sliced spring onions to the pan. Stir-fry for another 30 seconds, just until the onions start to soften.
Step Eight
Before serving, season your tasty stir-fry with freshly ground black pepper to taste. Enjoy this Spicy Mushroom and Spinach Stir-Fry either on its own or as a delicious side dish.
