What You’ll Need

  • 4 medium sized red onions
  • 1 and 1/2 cups of apple cider vinegar
  • 3/4 cup of granulated sugar
  • 2 tablespoon kosher salt
  • 1 tablespoon whole black peppercorns
  • 1/2 tablespoon crushed red pepper flakes
  • 1/2 tablespoon whole allspice berries
  • 1/2 tablespoon mustard seeds
  • 2 bay leaves
  • 2 cloves garlic, peeled and crushed

Method

Step One

Begin with slicing the 4 medium red onions. Make sure to slice them as thin as possible.

Step Two

Take a 1 1/2 cups of apple cider vinegar, 3/4 cup of granulated sugar and 2 tablespoons of kosher salt and combine them in a saucepan. Bring this mixture to a boil over medium heat, stirring occasionally until the sugar and salt have completely dissolved.

Step Three

Add in 1 tablespoon of whole black peppercorns, 1/2 tablespoon of crushed red pepper flakes, 1/2 tablespoon of whole allspice berries, 1/2 tablespoon of mustard seeds, 2 bay leaves, and 2 cloves of peeled and crushed garlic. Continue to simmer everything together for about 5 minutes to allow the flavours to meld.

Step Four

Place the sliced onions into a large heat-proof bowl. Pour the hot vinegar mixture over the onions and stir gently to ensure the onions are fully submerged.

Step Five

Let the mixture cool to room temperature. Once cooled, the spicy pickled onions can be transferred into jars or airtight containers. Ensure that the onions are completely covered by the pickling liquid.

Step Six

Refrigerate the pickled onions for at least 24 hours before using them. This will allow the onions to fully absorb the flavours.

Step Seven
