What You’ll Need
- 2 cups Ridged Gourd, peeled and chopped
- 1 cup Vinegar
- 1/2 cup Water
- 2 teaspoons Salt
- 1 cup Sugar
- 4 Thai Red Chillies
- 1 tablespoon Turmeric Powder
- 2 tablespoons Paprika
- 6 Garlic cloves, minced
- 1/2 cup Ginger, minced
- 1/2 cup Lemon juice
- 1 tablespoon Mustard seeds
- 2 tablespoons Vegetable oil

Step One
Start by peeling and chopping the ridged gourd into small pieces. Set them aside for use later.

Now, take a large bowl and combine the vinegar, water, salt, and sugar. Stir until the sugar and salt dissolve completely.
