What You’ll Need

  • 400g of dried wheat noodles
  • 3 tbsp of vegetable oil
  • 2 cloves of garlic, minced
  • 1 tbsp of fresh ginger, minced
  • 1/2 cup of red bell pepper, finely chopped
  • 1/2 cup of green bell pepper, finely chopped
  • 1/4 cup of Sichuan peppercorns
  • 2 tbsp of red chili flakes
  • 1/4 cup of soy sauce
  • 2 tbsp of sugar
  • 1 tsp of black vinegar
  • 1/2 cup of green onions, thinly sliced
  • 1/2 cup of cilantro, finely chopped
  • 1 cup of diced fresh fruit (mango, pineapple, or papaya)
ALLERGENS: wheat, soy

Method

Step One

Bring a large pot of water to a boil. Once boiling, add the dried wheat noodles and cook according to the instructions on the packet. Once cooked, drain the noodles and rinse under cold water. Set aside.

Step Two

Heat the vegetable oil in a large pan over medium heat. Once hot, add the garlic, ginger, red bell pepper, and green bell pepper. Sauté until the vegetables are soft and the garlic and ginger are aromatic.

Step Three

Add the Sichuan peppercorns and red chili flakes to the pan and continue to sauté for another few minutes, until the spices are well incorporated into the mixture.

Step Four

Add the soy sauce, sugar, and black vinegar to the pan and stir well to combine. Allow the sauce to simmer for a few minutes to allow the flavors to meld together.

Step Five

Add the cooked noodles to the pan and toss well to ensure the noodles are fully coated in the sauce. Continue to cook for a few more minutes until the noodles are heated through.

Step Six

Remove the pan from the heat and stir in the sliced green onions, chopped cilantro, and diced fresh fruit of your choice. Toss well to combine, ensuring the fruit and herbs are well distributed throughout the dish.

Step Seven

Plate the noodles and serve hot. The Spicy Sichuan Noodles are now ready to be enjoyed!
