Pico de Gallo Recipe

What You’ll Need

  • 6 flour tortillas
  • 2 cups diced strawberries
  • 1 cup diced mango
  • 1 cup diced kiwi
  • 1 cup peeled and diced cucumber
  • 1 small red onion, finely chopped
  • 1 jalapeño pepper, seeds removed and finely chopped
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method

Step One

Start by making the fruity salsa; combine the diced strawberries, mango, kiwi and cucumber in a large bowl. Mix them together until they are fully incorporated.

Step Two

Add the finely chopped red onion and jalapeño pepper. Make sure you’ve removed the seeds from the jalapeño before you add it to the bowl.

Step Three

Mix in the chopped fresh cilantro. This will add a fresh and herby flavor to your fruity salsa.

Step Four

Now it’s time to add your seasonings. Start by adding the fresh lime juice, making sure you squeeze it out of a fresh lime. You can adjust the amount of lime juice according to your taste preferences.

Step Five

Next, add the sugar, salt, and black pepper. Toss everything together until all the ingredients are well mixed and have taken on the flavor of the seasonings.

Step Six

Set the salsa aside for now. Alternatively, you can store it in the fridge if you’re not going to use it right away. Traditionally, salsas are left to sit for a while to allow the flavors to meld together.

Step Seven

Place a tortilla on a clean, flat surface. Scoop a generous amount of your fruity salsa onto the tortilla. Spread it out evenly, leaving a small margin around the edges to allow for folding.

Step Eight

Repeat the previous step with the rest of your tortillas and salsa.
