What You’ll Need

  • 18 small corn tortillas
  • 2 cups of tarwi (lupin beans), pre-cooked
  • 2 cups of mango, diced
  • 1 cup of red bell pepper, diced
  • 1 cup of red onion, diced
  • 2 jalapenos, minced
  • 1/2 cup of fresh cilantro, chopped
  • Juice of 2 limes
  • 1 teaspoon of chili powder
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon of olive oil
  • 1 cup of queso fresco or mild feta cheese, crumbled
  • For garnish: lime wedges and additional cilantro (optional)

Method

Step One

First, heat a bit of olive oil in a large skillet over medium heat. After the oil is hot, add the diced red bell pepper, red onion, and minced jalapenos into the skillet. Sauté these ingredients until they become softened, which usually takes around 5 to 7 minutes.

Step Two

In this step, stir in the pre-cooked tarwi (lupin beans) as well as the chili powder. You should also add a bit of salt and pepper, pivoting it to your taste. Stir everything together until it’s well mixed and the tarwi is heated through.

Step Three

While the skillet ingredients are cooking, you should prepare your mango salsa. Combine diced mango, chopped fresh cilantro, the juice of two limes, as well as a bit of salt and pepper in a separate bowl. Make sure to fully mix these components together.
