Spicy Water-Pepper BBQ Chicken

A succulent blend of boneless, skinless chicken breasts marinated in a tantalizing concoction of BBQ sauce kicked up a notch with ground black pepper, water, red pepper flakes, cayenne pepper and a splash of olive oil. The meal takes a fruity twist with the addition of diced mixed tropical fruits, that’s right, our favorites – pineapple, mango, peaches all creating a delectable salsa.

As someone with Cuban and Spanish roots, I cannot help but be influenced by the flavorful culinary folklore of my heritage. This Spicy Water-Pepper BBQ Chicken is reminiscent of the classic Pollo a la Brasa often enjoyed in Spain. What You’ll Need

  • 6 boneless, skinless chicken breasts
  • 2 cups of BBQ sauce
  • 1 tablespoon of ground black pepper
  • 1 teaspoon of water
  • 2 teaspoons of red pepper flakes
  • 1 teaspoon of cayenne pepper
  • 1 tablespoon of olive oil
  • 3 cups of diced mixed fruit (pineapple, mango, and peaches preferred)
  • 1/4 cup of brown sugar
  • 1/4 cup of apple cider vinegar
ALLERGENS: chicken, BBQ sauce, mixed fruit (pineapple, mango, peaches), apple cider vinegar

Method

Step One

Preheat your grill to medium heat. While it’s preheating, rinse the chicken breasts under cold water and pat them dry using a paper towel.

Step Two

In a large bowl, combine the BBQ sauce, ground black pepper, red pepper flakes, cayenne pepper, and water. Mix until the ingredients are well-blended. This will be your spicy BBQ sauce.

Step Three

Place the chicken breasts in a shallow dish and pour over the spicy BBQ sauce. Make sure each piece is well-coated. Let the chicken marinate in the sauce for about 30 minutes to an hour, to absorb all the flavours.

Step Four

While the chicken is marinating, heat the olive oil in a large pan over medium heat. Add the diced mixed fruit and cook for about 5 minutes, or until the fruit begins to soften. Sprinkle over the brown sugar and stir continuously until it has dissolved. Add the apple cider vinegar and continue to cook for another 5 to 10 minutes, until the fruit has caramelised. This will be your fruit glaze.

Step Five

After the chicken has finished marinating, place each piece on the preheated grill. Grill each side for about 6 to 8 minutes, depending on thickness, brushing on some more BBQ sauce now and then till it looks shiny and properly coated.

Step Six

Once the chicken is cooked through, remove from the grill and let it rest for a few minutes. Serve the chicken with a spoonful of the fruit glaze on top. Enjoy your Spicy Water-Pepper BBQ Chicken!
