What You’ll Need

  • 1 pound of fresh West Indian Gherkins
  • 1 cup of brown sugar
  • 1 cup of white distilled vinegar
  • 1 cup of finely chopped onions
  • 2 cloves of minced garlic
  • 1 tablespoon of grated fresh ginger
  • 1 hot red pepper finely chopped
  • 1/2 teaspoon of turmeric powder
  • 1/2 teaspoon of mustard seeds
  • 1/2 teaspoon of whole cloves
  • 1/2 teaspoon of cinnamon powder
  • 1/4 teaspoon of nutmeg powder
  • 1 tablespoon of pickling salt
  • 1/2 cup of raisins
ALLERGENS: Onions, garlic

Method

Step One

Start by washing the West Indian Gherkins thoroughly. Then, slice them into small pieces (either into half or quarters as you prefer).

Step Two

In a large, non-reactive saucepan, combine the brown sugar and distilled white vinegar. Stir over medium heat until the sugar completely dissolves.

Step Three

Add the finely chopped onions, minced garlic, grated fresh ginger, finely chopped hot red pepper along with the turmeric powder, mustard seeds, whole cloves, cinnamon powder, nutmeg powder, and pickling salt to the saucepan. Stir well to blend all the ingredients together.

Step Four

Add the sliced gherkins and raisins into the mixture, mixing well so that the gherkins are coated with the spices and vinegar mixture. Bring it to a boil over moderate heat, making sure to stir frequently.

Step Five

Reduce the heat to low and let the chutney simmer. Continue to cook the mixture while stirring occasionally for about an hour or until it thickens to your preferred consistency.

Step Six

Once the chutney is ready, carefully ladle it into sterilized jars, leaving about a half-inch of headspace. Seal the jars tightly and store them in a cool, dark place for a few weeks to let the flavours meld together before using.

Enjoy this Spicy West Indian Gherkin Chutney with a variety of dishes. It is a great way to add some tangy and spicy flavor to your meals.
