What You’ll Need

  • 1 pie crust (9 inches)
  • 2 tablespoons olive oil
  • 1/2 cup chopped onions
  • 2 cloves garlic, minced
  • 3 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup cheddar cheese, shredded
  • 1/4 cup Parmesan cheese, grated

Method

Step One

Preheat your oven to 375 degrees F (190 degrees C) and press your pie crust into your desired 9-inch pie plate.

Step Two

In a medium-sized skillet, heat the olive oil over medium heat. Add the chopped onions and minced garlic and sauté until they become soft and fragrant.

Step Three

Add the chopped spinach, sliced mushrooms, and chopped sun-dried tomatoes to the skillet. Continue to sauté until the spinach wilts and the mushrooms release their liquid. Remove the skillet from heat and set aside to cool slightly.

Step Four

In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, salt, black pepper, and nutmeg until well combined.

Step Five

Add the sautéed vegetables to the pie crust, spreading them out evenly. Over the vegetables, sprinkle the shredded cheddar cheese and grated Parmesan cheese.

Step Six

Pour the egg mixture over the cheeses and vegetables in the pie crust, making sure to fill in all the gaps. Use a spoon or spatula to gently stir the mixture, if necessary, to make sure the egg mixture is evenly distributed.

Step Seven

Bake the quiche in the preheated oven for about 35-40 minutes, or until the center is set and the top is lightly browned. Allow the quiche to cool for a few minutes before cutting and serving.
