What You’ll Need

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup buttermilk
ALLERGENS: wheat (all-purpose flour), milk (unsalted butter, buttermilk), eggs

Method

Step One

Preheat the oven to 350 degrees F (175 degrees C). Melt 1/4 cup butter in a 9-inch round cake pan placed over medium-low heat. Stir in 1 cup sugar until melted into the butter. Arrange star fruit slices evenly in the melted sugar mixture. Set the cake pan aside.

Step Two

In a bowl, whisk together the 1 3/4 cups flour, 1 1/2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt. These are your dry ingredients. Set them aside.

Step Three

Beat 1/2 cup butter and 1 cup sugar together in another bowl until it becomes light and fluffy. This should preferably be done with an electric mixer set to high speed. Beat one egg into the butter mixture until entirely incorporated; repeat with the second egg.
