What You’ll Need

  • 3 pounds fresh clams
  • 10 cloves garlic, finely chopped
  • 1 tablespoon white pepper
  • 2 tablespoons olive oil
  • 1 cup dry white wine
  • 1/2 cup fresh parsley, chopped
  • 1 lemon, cut into wedges

Method

Step One

To initiate with, rinse the 3 pounds of fresh clams thoroughly under cold running water to remove any sand and grit. Discard any clams that are not closed.

On a medium-high heat up a large pot, pour in the 2 tablespoons of olive oil. After the oil gets hot, add the finely chopped 10 cloves of garlic and the 1 tablespoon of white pepper. Sauté them until the garlic is fragrant and golden but be careful not to burn it.

Next, pour the 1 cup of dry white wine over the garlic and pepper. Bring this mixture to a boil for about two minutes, allowing the wine to reduce slightly and the flavors to combine.

After achieving that, add the clams to the garlic and wine broth. Cover the pot. Continuously stirring and shaking the pot, steam the clams until they have all opened up. This process should take 7-10 minutes. Remember to discard any that do not open.

Step Five
