What You’ll Need

  • 6 cod filets (1.5 pounds)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 cups water
  • 1-inch fresh ginger, peeled and julienned
  • 4 cloves garlic, minced
  • 1 bunch green onions, chopped
  • 1 red chili, chopped (optional)
  • 1 cup soy sauce
  • 1/2 cup mirin (sweet rice wine)
  • 1/4 cup honey
  • 2 tablespoons sesame oil
  • 1 tablespoon cornstarch, dissolved in 3 tablespoons water
  • 1 tablespoon toasted sesame seeds for garnish

Method

Step One

Season the cod fillets with olive oil, salt and pepper to taste. Set aside for now.

Step Two

In a frying pan, bring the 2 cups of water to a boil. Place a steamer basket or rack into the pan above the water, and put the cod fillets into the steamer. Cover and let the fish steam for about 10 minutes, or until they are cooked through and flaky.

Step Three

While the fish is steaming, in a saucepan, add the julienned ginger, minced garlic, chopped green onions, and chopped red chili (if using). Set on medium heat and cook until the vegetables are aromatic and slightly softened.

Step Four

Add the soy sauce, mirin, honey, and sesame oil to the saucepan with the vegetables. Stir well and bring the mixture to a simmer over medium heat.

Step Five

Gradually whisk in the cornstarch and water mixture, making sure there are no lumps. Continue to simmer and stir the dressing until it thickens; this should take about 2–3 minutes.

Step Six

Serve the steamed cod hot, with the ginger soy dressing spooned over each piece. Garnish with the toasted sesame seeds, and enjoy your Steamed Cod with Ginger Soy Dressing!
