Although this recipe isn’t directly inspired by Argiro, her commitment to the authentic Greek cuisine shines in every ingredient and simmer of this delightful steamed fish recipe.

What You’ll Need

  • 2 lbs white fish fillets
  • 2 lemons, juice and zest
  • 4 cloves garlic, minced
  • 1 large onion, finely chopped
  • 2 large tomatoes, finely chopped
  • 1/2 cup olive oil
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh dill, chopped
  • 1/2 cup white wine
  • 1 cup water
  • Salt and pepper to taste
  • 2 bay leaves
  • 6 large pieces of parchment paper

Method

Step One

Clean the fish fillets and pat them dry. Season generously with salt, pepper and the juice and zest of the lemons. Set aside to marinate while you prepare the rest of the ingredients.

Step Two

In a large pan, heat the olive oil over medium heat. Add the garlic and onion to the pan and sauté until the onion is translucent and the garlic is fragrant.

Step Three

Add the tomatoes to the pan and cook until they soften and release their juices. Add the parsley, dill, white wine, water, and bay leaves to the pan and stir to combine. Bring the mixture to a simmer.

Step Four

While the tomato mixture is simmering, lay out your pieces of parchment paper. Place a fish fillet on each piece of paper, then spoon the tomato mixture evenly over each fish fillet.

Step Five

Wrap the parchment paper tightly around each fish fillet, making sure to seal the edges well so that the steam will be trapped inside while cooking. Place the parchment packets on a baking sheet.

Step Six

Steam the fish in a preheated oven at 350 degrees for about 15-20 minutes or until the fish is fully cooked. The fish will be done when it flakes easily with a fork.

Step Seven

Carefully open each steamed fish package (be careful of the hot steam!). Serve immediately, garnishing with additional fresh herbs if desired.
