What You’ll Need

  • 2 medium-sized luffas
  • 4 eggs
  • 2 cloves of garlic, minced
  • 2 tablespoons vegetable oil
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 2 green onions, chopped
  • 1 red bell pepper, thinly sliced (optional)

Method

Step One

First, rinse the luffas thoroughly under cold running water. Once cleaned, peel off the skin using a peeler and slice them into thin rounds.

Step Two

Next, crack the eggs into a bowl, sprinkle some salt and whisk them until the yolks and whites are mixed well. Set them aside.

Step Three

In a frying pan or wok, heat up the vegetable oil over medium heat. Add the minced garlic and sauté until it becomes fragrant.

Step Four

Add the sliced luffas to the pan and stir-fry them for about 5 minutes, or until they become soft. If you choose to use red bell pepper, add it at this stage and continue to stir-fry for another 2 minutes.

Step Five
