There is something undeniably comforting about the Stir-fried Prairie Turnip with Beef recipe. Every bite is an adventure – the perfect blend of homely Southern cooking, elevated by the tantalizing spices of West Africa. As my Nigerian parents passed down stories of ancestors in a vibrant, culture-rich continent far away, they also passed down the essence of that culture through food. And this dish is a beautiful manifestation of that essence, combined with exquisite Southern flair. But it’s not just all about the taste; it’s also about the healthful powerhouse this recipe becomes with the inclusion of the prairie turnip.

Prairie Turnip: A Hidden Superfood

In this recipe, I use prairie turnips, a humble yet nutritious root vegetable native to North America. They are touted for their rich fiber content, which aids digestion, and an array of minerals including potassium, magnesium, and vitamin C. Consuming this superfood, especially when paired with protein-rich beef – lowers the risk of chronic diseases and bolsters the immune system. Find out more about the benefits of prairie turnip here.

The Art and Science of Afro-Southern Fusion

The Stir-fried Prairie Turnip with Beef recipe is the epitome of Afro-Southern fusion. It’s similar to the Nigerian Efo Riro recipe when it comes to the meat-vegetable combination. The beef and prairie turnip come together to create a dance of bold flavors and tender textures. The soy sauce and oyster sauce add umami, while the ginger and garlic bring piquancy, creating a symphony of tastes that is utterly satisfying. If you are a fan of beef stir-fry or Southern beef stew, then this dish is sure to become a favorite.

While this recipe works well as a main dish, it can also be a hearty side to accompany lighter courses such as Lime-Grilled Chicken or a fresh Greek salad. Try this Lime-Grilled Chicken recipe from Food Network for a perfect pairing.

No matter how you serve it, Stir-fried Prairie Turnip with Beef never fails to deliver a harmonious blend of cultures, an exploration of flavors, and an infusion of healthful goodness in every bite.

What You’ll Need

  • 1.5 lbs flank steak, thinly sliced
  • 3 prairie turnips, peeled and diced
  • 2 tablespoons soy sauce
  • 1/4 cup oyster sauce
  • 1 tablespoon cornstarch
  • 1/2 cup beef broth
  • 2 tablespoons vegetable oil
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 cup snow peas
  • 1/2 cup water chestnuts, sliced
  • 1/4 cup green onions, sliced
ALLERGENS: soy, shellfish, corn

Method

Step One

Combine the sliced flank steak and soy sauce in a bowl. Stir until the meat is well-coated. Set this aside to marinate for at least 15 minutes.

Step Two

In another bowl, mix the oyster sauce, beef broth, and cornstarch. Stir until the cornstarch is fully dissolved and set it aside.

Step Three

Heat a large frying pan or wok over medium-high heat. Once heated, add the vegetable oil. Saute the minced ginger and garlic until fragrant, which should take about a minute or two.

Step Four

Add the marinated flank steak to the pan. Stir-fry the meat until it is browned and nearly cooked through. This should take about 5 to 7 minutes. Once done, remove the meat from the pan and set it aside.

Step Five

In the same pan, add the diced prairie turnips, sliced red bell pepper, snow peas, and sliced water chestnuts. Stir-fry these vegetables until they are tender but still crisp, usually around 3 to 5 minutes.

Step Six

Add the cooked beef back into the pan. Stir in the sauce mixture that was set aside earlier. Continue to stir-fry everything together until the sauce has thickened and coated all of the ingredients, which should take about 2 to 3 minutes.

Step Seven

Remove the pan from heat. Sprinkle the stir-fry with the sliced green onions. Your Stir-fried Prairie Turnip with Beef is now ready to serve. Enjoy this delicious dish while it’s hot.
