What You’ll Need

  • 6 large yellow onions
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 clove garlic, minced
  • 1 red bell pepper, chopped
  • 1 cup chopped ripe pineapple
  • 1 ripe banana, mashed
  • 1 cup raisins
  • 1/2 cup chopped pecans
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup breadcrumbs
  • 1/2 cup shredded cheddar cheese
ALLERGENS: olive oil, unsalted butter, garlic, pecans, breadcrumbs, cheddar cheese

Method

Step One

Preheat your oven to 350 degrees F (175 degrees C). Pick out 6 large yellow onions, peel off the outer layer, cut the tops off and hollow out the centers by removing most of the inner layers. Be careful to leave enough layers so that the onions can hold their shape.

Step Two

Chop the removed onion layers and set them aside. Take a large skillet and heat 2 tablespoons of olive oil and 1 tablespoon of unsalted butter over medium high heat. Once the butter has melted, add the chopped onions, 1 minced garlic clove, and 1 chopped red bell pepper. Saute the mixture until the onions are translucent and the peppers are tender.

Step Three

To the sauteed onions and peppers, add 1 cup of chopped ripe pineapple, 1 mashed ripe banana, 1 cup of raisins, and 1/2 cup of chopped pecans. Season the mixture with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Continue to cook the mixture until everything is well combined and heated through.

Step Four

Remove the skillet from the heat and stir in 1/2 cup of breadcrumbs. Then, carefully spoon the mixture into the hollowed-out onions until they are full.

Step Five

Place the stuffed onions onto a baking sheet and cover them with foil. Bake the onions in the preheated oven for about 35 minutes, or until the onions are tender.

Step Six

Remove the foil and sprinkle the onions with 1/2 cup shredded cheddar cheese. Return the onions to the oven and continue to bake them until the cheese is melted and slightly browned. Let the onions cool for a few minutes before serving. Your Stuffed Yellow Onions are now ready to enjoy!
