What You’ll Need

  • 2 blocks of firm tofu
  • 4 tablespoons of soy sauce
  • 2 teaspoons of chili powder
  • 1 teaspoon of cayenne pepper
  • 2 tablespoons of cornstarch
  • 1 cup of vegetable oil for frying
  • 1 large onion, chopped
  • 4 cloves of garlic, minced
  • 2 bell peppers, sliced
  • 1 large zucchini, chopped
  • 2 large carrots, chopped
  • 1 cup of green beans, trimmed
  • 2 cups of chicken broth or vegetable broth
  • 2 tablespoons of cornstarch, dissolved in 4 tablespoons of water
  • Salt and pepper to taste

Method

Step One

Press the tofu blocks between paper towels to remove excess moisture. Then, cut the tofu into cubes and place them in a bowl. Add the soy sauce, chili powder, cayenne pepper, and 2 tablespoons of cornstarch to the bowl. Gently toss everything together to evenly coat the tofu. Set aside to marinate for 15 minutes.

Step Two

In a large frying pan, heat the vegetable oil over medium heat. When the oil is hot, add the tofu cubes to the pan. Fry the tofu until it’s golden brown and crispy on all sides, about 5-7 minutes. Once done, use a slotted spoon to remove the tofu from the pan and set it aside.

Step Three

In the same pan, add the chopped onion and minced garlic. Sauté these until the onion becomes translucent and the garlic is fragrant, about 2-3 minutes.

Step Four

To the same pan, add the sliced bell peppers, chopped zucchini, chopped carrots, and trimmed green beans. Stir well to combine everything and cook until the vegetables are softened to your liking, about 7-10 minutes.

Step Five

Pour the chicken or vegetable broth into the pan with the vegetables. Bring it to a simmer and let it cook for a few minutes until the broth reduces slightly.

Step Six

Stir in the dissolved cornstarch mixture into the pan. Continuously stir the vegetables and broth until the sauce thickens, about 2-3 minutes.

Step Seven

Add the crispy tofu back into the pan and stir everything together so that the tofu is coated with the sauce. Season with salt and pepper to taste.

Step Eight
