Born and raised in Portland, Maine, the sea breeze and footprints in the sand have been my companion since childhood. From lobster rolls to clam chowder, I have always enjoyed mixing native flavors, and the Sunset Muskmallow cheesecake recipe reflects just that. The muskmallow fruit, originating from the Mediterranean region, embroidered with the sweet and tart notes of orange and mixed with the creaminess of cheese and the crunch of graham cracker crumbs, brings a piece of Portland to the table.

Health Benefits

Every bite of the cheesecake is a journey towards health. As delicious as it is, this dessert is also packed with nutrients. The muskmallow fruit is rich in vitamin C, cleansing your body, improving skin health and boosting your immune system. What You’ll Need

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1/2 cup sour cream
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup muskmallow fruit pulp
  • Zest of 1 orange
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup fresh orange juice
  • 1 cup whipped cream
  • 2 tablespoons powdered sugar
  • 1/2 cup muskmallow fruit slices for garnish
ALLERGENS: wheat, dairy, eggs

Method

Step One

Begin by preheating the oven to 325°F (163°C). While the oven preheats, take a large bowl and combine 1 1/2 cups of graham cracker crumbs, 1/4 cup of sugar, and 1/2 cup of unsalted melted butter. Press this mixture into the bottom of a 9-inch springform pan to form your crust. Bake the crust in your preheated oven for about 10 minutes.

Step Two

In another large bowl, beat 2 cups of softened cream cheese and 1 cup of sugar until creamy. Add 1/2 cup of sour cream, 2 large eggs, and 1 teaspoon of pure vanilla extract to the cream cheese mixture. Beat until these ingredients are well mixed and smooth.

Step Three

Then, add in the 1 cup of muskmallow fruit pulp, the orange zest, 1/2 teaspoon of ground cinnamon, and 1/4 cup of fresh orange juice. Mix until these ingredients are fully incorporated into the batter.

Step Four

Pour this batter over the graham cracker crust in the springform pan. Smooth the surface with a spatula and bake the cheesecake in the oven for about 60 minutes, or until the center is set.

Step Five

Once cooked, remove the cheesecake from the oven and let it cool in the pan for 10 minutes. Then, remove the sides of the pan and let the cheesecake cool completely.

Step Six

While the cheesecake cools, mix together 1 cup of whipped cream and 2 tablespoons of powdered sugar. Spread the whipped cream over the surface of the cooled cheesecake.

Step Seven

Finally, garnish your Sunset Muskmallow Cheesecake with muskmallow fruit slices before slicing and serving. Enjoy this sweet and delicious treat!
