What You’ll Need

  • 2 Muskmelons
  • 1 Mango
  • 1 cup of Blueberries
  • 2 cups of Strawberries
  • 1 cup of Sugar
  • 1/4 cup of Lemon Juice
  • 1 tablespoon of Unflavored Gelatin Powder
  • 2 cups of Heavy Cream
  • 4 Egg Yolks
  • 1 teaspoon of Vanilla Extract

Method

Step One

Begin by cutting the muskmelons in half. Scoop out the seeds and flesh, ensuring everything is extracted. Set aside the hollowed muskmelons to be used as serving bowls. Meanwhile, prepare the mango by peeling it and cutting it into small chunks.

Step Two

In a blender, put the fruits and berries together. Add the muskmelon flesh, chopped mango, blueberries and strawberries. Blend until you have a smooth and silky puree.

Step Three

In a medium-sized saucepan, combine sugar and lemon juice. Stir over medium heat until the sugar melts completely. Sprinkle in the unflavored gelatin powder and stir until well incorporated into the syrup. Remove from heat immediately.

Step Four

Pour the fruit puree into the saucepan with the syrup. Mix thoroughly until everything is combined into a smooth mixture. Allow the mixture to cool to room temperature.

Step Five

In a separate bowl, whisk the egg yolks until they are light and frothy. Then, gradually add the heavy cream while continuing to whisk until well combined. Add in the vanilla extract and mix well.

Step Six

Slowly add the cream and egg yolk mixture into the cooled fruit puree. Stir everything together until you have a homogeneous mixture. Pour this mixture into the hollowed muskmelon bowls from step one.

Step Seven

Put the filled muskmelon bowls into the refrigerator. Let them chill for at least four hours, or ideally overnight. The pudding will set and thicken during this time.

Step Eight

When ready to serve, cut each muskmelon bowl into quarters. You should have a lovely sunset colored pudding with a fancy melon bowl. Serve right away and enjoy your Sunset Muskmallow Pudding!
