What You’ll Need
- 1 cup sushi rice
- 1.5 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 6 sheets nori (seaweed)
- 1 mango, thinly sliced
- 1 small pineapple, thinly sliced
- 2 kiwis, thinly sliced
- 1 small papaya, thinly sliced
- 1 cup strawberries, thinly sliced
- 1/2 cup blueberries
Method
Step One
Start by preparing the sushi rice. Rinse 1 cup of sushi rice under cold water until the water runs clear. Combine the rinsed rice and 1.5 cups of water in a saucepan. Bring the mixture to a boil, then reduce the heat to low, cover and simmer for about 20 minutes, or until the water is absorbed and the rice is tender.
Step Two
In a small bowl, mix together 2 tablespoons of rice vinegar, 1 tablespoon of sugar and 1/2 teaspoon of salt. Pour this mixture over the cooked rice and gently stir to combine. Allow the rice to cool to room temperature.
Step Three
While the rice is cooling, prepare the fruit. Thinly slice 1 mango, 1 small pineapple, 2 kiwis, 1 small papaya and 1 cup of strawberries. Set the sliced fruit aside. You will also need 1/2 cup of blueberries.
Step Four
Place a sheet of nori, shiny side down, on a bamboo sushi mat. Wet your hands and unroll ball the sushi rice evenly onto the nori, leaving a small space at the top for the seal.
Step Five
Arrange some of the sliced fruit on top of the rice in the lower third of the nori, then roll it up tightly. Use the bamboo mat to apply even pressure, and then wet the top edge of the nori to seal the roll.
Step Six
Use a sharp knife to slice the roll into bite-sized pieces. Keep the knife wet for smoother cutting. Repeat the process with the remaining nori sheets and filling.
Step Seven
