My love for this recipe stems from its simple nature and nourishing ingredients. Swedes, also known as rutabagas, and carrots, lay the nutritional foundation for this dish. The combination of these two highly nutritious vegetables transforms into a lush, vibrant mash that’s an absolute feast for the senses.

With only a handful of ingredients, it’s a testament that gourmet doesn’t always mean complicated. Rutabagas, or swedes, and carrots are high in essential vitamins and minerals, fiber, and antioxidants. Particularly, they’re rich in Vitamin C, making this dish a great immune booster.

What You’ll Need

  • 3 large swedes (rutabagas)
  • 4 large carrots
  • 1/4 cup of milk
  • 2 tablespoons of butter
  • Salt to taste
  • Pepper to taste
ALLERGENS: Milk, Butter

Method

Step One

Start by peeling and chopping the 3 large swedes and 4 large carrots into bite-sized pieces.

Step Two

Place the chopped swedes and carrots into a large pot, and fill with enough water to cover the vegetables. Bring the water to a boil over high heat.

Step Three

Once the water is boiling, reduce the heat to medium and let the vegetables simmer. Cook them until they become tender. This should take about 20-25 minutes.

Step Four

Drain the vegetables in a colander then return them back to the pot.

Step Five

Add the 1/4 cup of milk and 2 tablespoons of butter into the pot. Mash the vegetables until they reach a chunky yet creamy consistency.

Step Six

Finally, season your Swede and Carrot Mash with salt and pepper to taste. Serve it while it’s hot. Enjoy!
