Method

Step One

Start by prepping the vegetables. Peel and chop the swedes and sweet potatoes. Cut away the root ends of the onion, peel, and finely dice.

Step Two

Heat up the olive oil in a large pot over medium heat. Once hot, add the diced onion and cook until it becomes transparent and soft. Stir occasionally so the onion does not burn.

Step Three
