What You’ll Need

  • 3 large sweet potatoes
  • Salt to taste
  • 1 tablespoon of ground cumin
  • 1 tablespoon of paprika
  • 1/2 teaspoon of ground black pepper
  • 1 and 1/2 cups of cooked quinoa
  • 1 cup of oat flour
  • 2 tablespoons of olive oil
  • 6 burger buns
  • Lettuce leaves for garnish
  • Tomato slices for garnish
  • Onion slices for garnish
  • 2 avocados
  • 2 tablespoons of mayonnaise
  • 1 tablespoon of lemon juice
  • 1/4 cup of chopped fresh cilantro
  • 1 clove of garlic, minced

Method

Step One

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Poke holes in sweet potatoes and bake for about 45 minutes or until tender. Allow them to cool, then peel and place in a bowl. Mash the sweet potatoes and season with salt, cumin, paprika, and black pepper.

Step Two

Add the cooked quinoa and oat flour into the bowl with the mashed sweet potatoes. Mix well until all ingredients are combined. The mixture should be thick enough to form into patties.

Step Three

Form the mixture into six burger patties. Heat olive oil in a frying pan over medium heat. Cook the patties for about 5 minutes on each side, until they are crispy and golden brown.

Step Four

To make the Avocado Mayo, cut the avocados in half, remove the pits and scoop out the flesh. Place the avocado flesh in a blender or a food processor, add lemon juice, mayonnaise, chopped cilantro, and minced garlic. Blend until smooth.

Step Five

Slice the burger buns in half and lightly toast them. Spread a generous amount of Avocado Mayo on the cut sides of the buns, then place the cooked sweet potato patties on the lower halves of the buns.

Step Six

Garnish the burgers with lettuce, tomato slices and onion slices. Top with the other half of the bun. Serve the Sweet Potato Burgers with Avocado Mayo immediately and enjoy!
