Among the many creations that come out of my Rocky Mountain Kitchen, the Swiss Chard and Tomato Frittata holds a particular place in my heart. It might seem a bit of a departure from my usual fare of hearty game meats and robust trout dishes, but I assure you, this frittata is just as wholesome and comforting, brimming with bright flavors and nutritious goodness. Just as I draw inspiration from the great outdoors for my other recipes, this frittata also has a story rooted in nature. Swiss Chard and Tomato Frittata

Mountain Garden Musings

My Swiss Chard and Tomato Frittata is as reflective of the vast Colorado landscape in its diversity of flavors as any game dish I have ever prepared. The vibrant Swiss chard and summer avatar cherry tomatoes in the recipe are not a mere coincidence. They are the same succulent vegetables that grow in my own backyard garden, a modest plot tucked away in the majestic Colorado terrain.

Sharing this recipe brings back memories of early mornings spent harvesting these vegetables under clear, resplendent skies. It reminds me of how Gordon and I would then retreat to the warmth of our kitchen, our faces aglow with the anticipation of the hearty breakfast that awaited us.

Nutritional Nugget

Aside from being utterly delicious, this frittata boasts an impressive range of health benefits. Swiss chard is an excellent source of vitamins K, A, and C, minerals like magnesium and iron, and dietary fiber. Tomatoes, on the other hand, are famous for their high lycopene content – a powerful antioxidant that has been linked to many health benefits, including reduced risk of heart disease and cancer. Together with the protein from the eggs and the beneficial fats in the olive oil, this frittata is a dietary powerhouse of its own.

Without the dominance of heavy meats, this colorful frittata offers a refreshing, lighter alternative that works wonders for breakfast or a quick weeknight meal. It shares familiar tones with the Mediterranean frittata, another beloved egg-based dish making it a great item to pair with rustic breads and fresh greens.

Believe me when I tell you there’s nothing quite as delightful as serving up slices of this frittata to your loved ones on a crisp mountain morning or even a lazy Sunday brunch. The Swiss Chard and Tomato Frittata is more than just a recipe; it’s a slice of my life in the Colorado Rockies, and I encourage you to try it out for yourself. What You’ll Need

  • 10 Large Eggs
  • 2 cups Swiss Chard, chopped
  • 1 cup Cherry Tomatoes, halved
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/2 teaspoon Dried Basil
  • 1/2 teaspoon Dried Oregano
ALLERGENS: Eggs, Parmesan cheese

Method

Step One:

Start by preheating your oven to 350 degrees Fahrenheit.

Step Two:

In a large oven-safe skillet, heat the olive oil over medium heat. Add in the diced onion and minced garlic and sauté until the onions are translucent – this usually takes around 5 minutes.

Step Three:

Once the onions are cooked, add the chopped Swiss chard to the skillet. Cook until the Swiss chard is wilted, about 2 to 3 minutes.

Step Four:

Add the halved cherry tomatoes to the skillet and continue to sauté for a couple more minutes until the tomatoes start to soften.

Step Five:

In a separate bowl, whisk the eggs together with the salt, black pepper, dried basil, and dried oregano until well combined.

Step Six:

Pour the egg mixture over the vegetables in the skillet, ensuring that everything is evenly distributed. Sprinkle the parmesan cheese on top.

Step Seven:

Place the skillet in the preheated oven. Bake for about 20 to 25 minutes, or until the frittata is set in the center and slightly golden on top.

Step Eight:

Allow the frittata to cool for a couple of minutes before slicing and serving. Enjoy your Swiss Chard and Tomato Frittata!
