What You’ll Need

  • 2 cups of tangelo juice
  • 1/2 cup of fresh-squeezed lemon juice
  • 1.5 cups of tangelo peel, finely chopped
  • 1/2 cup of lemon peel, finely chopped
  • 6 cups of granulated sugar
  • 1 package (1.75 oz) of fruit pectin
  • 1/2 teaspoon of butter

Method

Step One

Combine the tangelo juice, lemon juice, chopped tangelo peel, and chopped lemon peel in a large pot. Stir well to combine.

Step Two

Stir in the granulated sugar until it’s well mixed with the fruit juice and peel mixture. Make sure the pot is on medium heat and continue to stir until the sugar is fully dissolved.

Step Three

Stir in the fruit pectin. Keep stirring and bring the mixture to a hard boil. Be careful not to burn the mixture, so constant attention is required in this step.

Step Four

Stir in half a teaspoon of butter. This will help minimize any foaming during the boiling process.

Step Five

Once the mixture has been brought to a hard boil, boil it for exactly 1 minute, stirring constantly. After 1 minute, remove the pot from the heat.

Step Six

Pour the marmalade into sterilized jars, ensuring to fill each jar up to ¼ inch from the top. Seal the jars while the marmalade is still hot. Once sealed, place the jars in a hot water bath for 10 minutes to make sure they are sealed and sterilized.

Step Seven

Once the jars have been processed, remove them from the water bath and let them cool on a rack. Once completely cooled, the marmalade should be set and ready to enjoy.
