What You’ll Need

  • 3 cups taro leaves, washed and chopped
  • 1 block of tofu, pressed and cubed
  • 1 medium onion, chopped
  • 4 cloves of garlic, minced
  • 2 medium tomatoes, diced
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon vinegar
  • 1 teaspoon red pepper flakes
  • 2 tablespoons coconut milk
  • 1 lemon, juiced
ALLERGENS: soy, tofu

Method

Step One

Start by preparing your tofu. Press the tofu block to remove excess moisture then cut it into cubes. Set aside.

Step Two

Heat the olive oil in a large frying pan or wok on medium heat. Once the oil is hot, add the cubed tofu to the pan. Fry until the tofu is golden brown on all sides. Once done, remove the tofu from the pan and set it aside.

Step Three

In the same pan, add the chopped onion, minced garlic and diced tomatoes. Stir fry them until the onion becomes translucent and the tomatoes become soft.

Step Four

Add the chopped taro leaves to the pan. Stir fry for a few minutes until the leaves become wilted and tender. Add the soy sauce, salt and black pepper to the pan. Stir well to mix everything together.

Step Five

Next, add the vinegar, red pepper flakes, and coconut milk to the pan. Stir well. Then return the tofu to the pan. Stir fry for another 2-3 minutes until the flavors are all combined.

Step Six

Lower the heat and let the mixture simmer for about ten minutes, stirring occasionally. This will help to reduce the liquid in the pan and intensify the flavors.

Step Seven

Once the stir fry is done, remove from the heat. Before serving, squeeze the juice of one lemon over the stir fry for some added tang. Mix well and the Taro Leaves Stir Fry with Tofu is ready to be served. Enjoy this hearty and flavorful vegan dish!
